Because of the heat of the cayenne pepper, it handles the Mexican cheese blend very well as well as cheeses that go well with an aged cheddar. It doesn't lose its richness. Do be warned, it is a very rich dish. It is not your Kraft Mac and Cheese or your Velveeta version. This one works well at our Christmas/Thanksgiving dinners and is requested as one of the regular dishes. Ruined me for all others...
