I’m a big fan of shrimp and just recently this summer I’ve started to grill them rather than doing the usual stir-fry. Here’s one of my favorite recipes that’ll add some zing to your shrimp.

2 large shallots, peeled and chopped

1 2-inch piece of fresh ginger, peeled and finely chopped

4 cloves garlic, smashed

3/4 cup light soy sauce

1/2 cup fresh lime juice

2 tablespoons sugar

1/4 cup chopped green onions
-
1/4 cup sesame oil
-
1/4 teaspoon coarsely ground black pepper

2 pounds large tiger shrimp, shells and head on
Instructions
- Marinate
- Place shallots, ginger, garlic, soy, lime juice, and sugar in a blender and blend until smooth. Add the green onion and oil and blend until combined. Season with black pepper, to taste. Place unpeeled shrimp in a large bowl, pour the marinade over, and let marinate at room temperature for 20 minutes.
- Grill
- Preheat your grill to high heat. Remove shrimp from marinade and grill for a couple minutes on each side. When the shrimp turns from dark blue to pink it is a good indication that it’s almost done. Just wait about 30 seconds longer after turning pink just to be safe.
