3 cups water

1 cup wheat berries

o Use spelt berries in place of wheat berries if you're wheat-intolerant.

o Substitute chopped dried apricots for cranberries.

o Add 1 cup chopped walnuts, cashews, or hazelnuts.

1/4 tsp. sea salt

1/4 cup maple syrup

1/4 cup lemon juice
-
3/4 cup vegan mayonnaise

1 cup dried cranberries
-
2 cups cooked wheat berries (see below)

2 stalks celery, minced

2 medium Granny Smith apples
Instructions
- Remove the core and seeds from the apples and chop into 1/2-inch pieces. If the apples are organic, I like leaving the peel on, but the choice is yours. Place the chopped apples in a bowl with the rest of the ingredients and mix together well.Add the grain to the water, bring to a boil, reduce heat, cover, and simmer for 1 1/2 hours. Presoaking these grains will reduce the cooking time.
