  • add   1 Tbsp. unsalted butter
  • add   1/2 cup fish stock or chicken stock
  • add   3 Tbsps. white wine
  • add   2-1/4 lbs. tilapia filletes, rinsed and patted dry
  • add   2 tsps. peanut or vegetable oil
  • add   2 dried red chillies, seeded
  • add   1/2 tsp. whole black peppercorns
  • add   3 star anise, broken up
  • add   1 tsp. allspice, whole
  • add   8 1 inch pieces fresh ginger, cut into 1/8 inch slices
  • add   4 scallions, cut into 3 inch sections
  • add   1 medium carrot\cooked, cut into 4 inch sticks


  1. Preheat oven to temperature 400°F. Combine first 7 ingredients in abowl and spread in the bottom of a well oiled baking dish. Arrangefish over vegetables and season with salt to taste. Add wine and1/2 cup stock.Bake 25-30 minutes until fish flakes easily with a fork. Setfish aside and keep warm. Strain contents of baking dish into asaucepan. Discard spices and vegetables. Add remaining stock. Bringto a boil over high heat and reduce by a third. Season with salt andpepper to taste. Swirl in butter. Serve sauce over fish.
