  • add   1/2 cup sugar
  • add   3/4-1 cup water
  • add   2 cups flour
  • add   1/4 cup lard or bacon drippings
  • add   3 1/2 teaspoons baking powder
  • add   1/2 teaspoon salt

Instructions

  1. Mix ingredients in order given.
  2. Place on cookie sheet.
  3. You may place dough directly on rack. Rack makes it easy to break into servings.
  4. Bake 15-20 min at 350 degrees.
  5. Watch for golden brown.
  6. When you use the rack you flip it over between the racks after about 12 minute
  7. You can cut it into circles like biscuits also.

My mom made bannock with any kind of fat drippings from any kind of meat as well as melted lard. She never used sugar. Mom would roll the bannock out in a large circle about 1 inch thick and then prick it with the tip of a spoon, place it on a cookie sheet and bake for 20 mins or until golden brown in a hot oven (400F). We loved it the next day, toasted. YUM.
