  •   3 Tblsp. olive oil
  •   1 Tblsp. minced garlic
  •   1 medium onion (diced)
  •   1 12 oz. jar artichoke hearts (drained and chopped)
  •   3 tomatoes (seeded and diced)
  •   Bruschetta:
  •   garlic powder, salt, pepper to taste
  •   4 slices provolone cheese
  •   8 strips of bacon OR 4 slices prosciutto
  •   4 skinless, boneless chicken breasts

Instructions

  1. Preheat oven to 350 degrees.

    Wash chicken breasts. Slice each one on the side, lengthwise, to create a pocket. Lighty salt the inside. and line with provolone cheese.

    To make bruschetta:
    Combine tomatoes, artichoke hearts, onion, garlic, olive oil.

    Spoon 1-2 Tablespoons of bruschetta into the chicken breast. Use a toothpick to close the hole shut.

    Drizzle olive oil on a cooking sheet or 9 by 13 pan. Place chicken breasts in pan and season to taste with salt, pepper and garlic powder.

    Bake at 350 degrees for 20 minutes. Remove from oven and wrap 2 slices of bacon or one slice of prosciutto around each breast. Bake for another 20 minutes or until chicken is cooked thoroughly.

    Serve with pasta for a complete meal.
