  •   1 cup low fat milk
  •   50g butter, melted
  •   1 egg
  •   21/2 cups plain flour
  •   11/2 tsp instant dried yeast
  •   3/4 cup sugar
  •   11/2 teaspoon ground cinnamon

Instructions

  1. 1. Place milk in a microwavable jug. Microwave until hot approx 30-40 seconds (make sure it isn't boiled). Stir in 1 tablespoon of the melted butter.
  2. 2. Sift flour into a bowl. Stir in yeast, 1/4 cup of the sugar and 1/2 teaspoon of the cinnamon. Make a well in the centre and add milk mixture and an egg. Mix to form a dough. Knead on a lightly floured surface for 10 minutes or until smooth and elastic.
  3. 3. place dough in a lightly oiled bowl. set aside in a warm place until doubled in size (about an hour ) . Make sure to cover bowl with a cloth or glad wrap. Line a baking tray with baking paper.
  4. 4. Using fist punch dough down, turn onto a floured surface and knead until smooth. press dough out until approx 2.5cm thick. Using a 6.5 circle cutter cut out circles from dough, then using a 2.5cm cutter cut circles out from the middle of each doughnut.
  5. 5. Place doughnuts on tray, cover with cloth and leave for 30 minutes (until doubled in size).
  6. 6. Meanwhile preheat oven to 200 celcius or 180 in a fan forced oven. Cook doughnuts for 10-12 minutes or until golded and cooked through. Combine remaining sugar and cinnamon in a bowl. Brush hot doughnuts with the remaining melted butter, dip in the sugar mixture. and serve.

Instead of cinnamon doughnuts you could sift 2/3 cup icing sugar add 3-4 tsp of lemon juice and stir to combine. dip half the doughnuts in sugar mixture and then in 100's and 1000's.
