  •   1 1/2 cups. Chocolate Cookie Crumbs
  •   1 tsp. Almond Extract
  •   3 Tbs. Butter or Margarine, melted
  •   1 (21 oz.) can Cherry Pie filling
  •   2 (8 oz.) pkgs. Cream Cheese, softened
  •   2 (1 oz.) squares Unsweetened Chocolate, melted
  •   3 eggs
  •   1 (14 oz.) can Sweetened Condensed Milk (NOT Evaporated Milk)
  •   3 Tbs. Cornstarch

Instructions

  1. 1. Preheat oven 300 degrees F. In a small mixing bowl, combine crumbs and butter; press firmly on bottom of 9-inch springform pan.
  2. 2. In a small sauce pan over low heat, melt chocolate with sweetened condensed milk, stirring constantly. Remove from heat.
  3. 3. In a large mixing bowl, beat cream cheese until fluffy. Gradually add chocolate/ condensed milk mixture until smooth. Add eggs, cornstarch, and almond extract. Pour into prepared pan.
  4. 4. Bake 50 to 55 minutes or until center is set. Cool and chill.* Top with cherry pie filling before serving. Store leftovers covered in the refrigerator.

This cheesecake can be topped with a berry pie filling as well; my favorite is strawberry. Try to find your favorite. * Preferably cool overnight, but allowing to cool completely before topping will work just as well.

For each birthday I always make a chocolate party cake based on a Jamie Oliver recipe. It is simple, but not quick. You have to take about 3 steps to finish it with more than an hour interval. (1) Make two cakes, cool down. (2) Put stuffing in between and (3) cover with chocolate. To make it even more special (4) decorate!

I got it from my old college friend.. I spent a week at my college friend's parents' home for the holidays.. The hidden ingredient in it was the mashed potatoes, you could not taste it!! So good!! I still make it every year!! My family love it!!
