  •   1/2 pound linguini
  •   olive oil as needed
  •   pepper
  •   salt
  •   2 cloves garlic
  •   3/4 cup toasted pine nuts
  •   3/4 cup parmesan cheese
  •   2 cups fresh basil leaves
  •   Pasta
  •   pepper
  •   salt
  •   olive oil as needed
  •   10 fresh large basil leaves, slivered
  •   1 clove garlic, minced
  •   4 roma tomatoes, seeded and diced
  •   Bruschetta
  •   pepper
  •   salt
  •   olive oil
  •   4 boneless, skinless chicken breasts

Instructions

  1. Preheat outdoor grill or indoor grill pan. Rub chicken with olive oil, salt and pepper. Grill chicken 4-5 minutes on each side. Reserve.

    For Bruschetta mix tomatoes, garlic, 3/4 of the basil, olive oil, salt and pepper. Reserve.

    For Pesto in food processor add basil, pine nuts, garlic, salt and pepper. Process till chopped and then slowly add olive oil till you reach desired consistency. Stir in Parmesean cheese. Meanwhile cook pasta to desired consistency. When pasta is cooked mix together with pesto.

    To serve divide past into four portions. Top each portion with a chicken breast and tomato mixture. Garnish with basil.

In college a few friends and I would have get togethers at my apartment during the summer when there were only a few of us around. I would cook and show we'd have a small wine tasting. I bragged about my cooking and, in turn, it made everyone really like it. I tried to introduce things that were a bit off the beaten path for everyday college meals. Things that were easy to create. This is one.
