  • add   3 tablespoons finely chopped green onions
  • add   8-ounces coarsely grated mozzarella
  • add   3/4 cup bottled buffalo chicken wing sauce
  • add   2 cups chopped boneless, skinless rotisserie cooked chicken breast
  • add   1/8 teaspoon fresh ground black pepper
  • add   1/8 teaspoon cayenne pepper
  • add   1 teaspoon fresh lemon juice
  • add   1 clove garlic, minced
  • add   2 tablespoons fresh chopped parsley
  • add   1/3 cup mayonnaise
  • add   6-ounces blue cheese, crumbled, divided
  • add   4 (7-inch round) Mediterranean flatbreads or pocketless pitas


  1. Preheat oven to 400 degrees F. Place flatbreads in single layer on large baking sheet. Combine 4-ounces crumbled blue cheese, mayonnaise, parsley, garlic, lemon juice, cayenne pepper, and black pepper in a medium bowl. Mix until thoroughly combined. Spread equal portions of blue cheese mixture over flatbreads. Mix together chicken and buffalo wing sauce in a large bowl. Distribute equal portions of chicken over blue cheese layer, followed by mozzarella cheese, and remaining 2-oz. of crumbled blue cheese. Bake in preheated 400 degree F. oven for 5 to 10 minutes or until mozzarella cheese has thoroughly melted. Remove from oven, sprinkle with chopped green onions. Makes 4 main course servings.
