1 Large Butternut Squash
-
2 Granny Smith Apples (Chopped)

1 Whole medium size onion (Finely chopped)

4 cups of Chicken Broth
-
? stick butter
-
? cup of cream
-
Dash of curry powder, nutmeg
-
White pepper & Salt to taste
Instructions
- Peel and boil butternut squash until tender then drain and reserve the water
- Put squash through food processor until very smooth (you may have to add a bit of water to make very smooth)
- Over medium heat cook onion and apples in butter until very tender
- Add to the food processor until very smooth
- Transfer ingredients from food processor to pot
- Add chicken broth
- Check consistency (if too thick add some of the cooking water)
- Start adding your spices to taste
- Make sure you allow your spices to blend for a while before you add more
- At the very end add your cream
