Ingredients [?] Change Serving Size Add all ingredients to Shopping List

  •   1 Large Butternut Squash
  •   2 Granny Smith Apples (Chopped)
  •   1 Whole medium size onion (Finely chopped)
  •   4 cups of Chicken Broth
  •   ? stick butter
  •   ? cup of cream
  •   Dash of curry powder, nutmeg
  •   White pepper & Salt to taste

Instructions

  1. Peel and boil butternut squash until tender then drain and reserve the water
  2. Put squash through food processor until very smooth (you may have to add a bit of water to make very smooth)
  3. Over medium heat cook onion and apples in butter until very tender
  4. Add to the food processor until very smooth
  5. Transfer ingredients from food processor to pot
  6. Add chicken broth
  7. Check consistency (if too thick add some of the cooking water)
  8. Start adding your spices to taste
  9. Make sure you allow your spices to blend for a while before you add more
  10. At the very end add your cream
