  • add   2-3 ripe tomatoes
  • add   2 cans anchovies
  • add   1 loaf crusty French bread
  • add   1/4-1/3 cup extra virgin olive oil (about)


  1. Arrange bread on a serving platter, and brush with olive oil.
  2. Top each piece of bread with a tomato slice and an anchovy.
  3. If desired, garnish with freshly chopped parsley or basil.
  4. Another variation is to mash a clove of garlic and mix with the olive oil before brushing on the bread.
