  • add   Cake ingredients:
  • add   4 cups grated carrots
  • add   20 oz crushed pineapple (undrained)
  • add   2 3/4 C flour
  • add   1 1/4 C sugar
  • add   1 cup raisins
  • add   1/2 C cup vegetable oil
  • add   2 eggs
  • add   2 Tb starch
  • add   3 tsp baking soda
  • add   3/4 tsp salt
  • add   3 tsp cinnamon
  • add   1 1/2 tsp nutmeg
  • add   Frosting Ingredients:
  • add   1 C sugar
  • add   8 oz cream cheese
  • add   4 Tb butter
  • add   2 ts vanilla extract

Instructions

  1. Mix all cake ingredients well and pour into lightly oiled 9x12 baking dish.
  2. Bake 45 minutes at 325 degrees or until done.
  3. While cake is cooking, prepare frosting. Simply mix the ingredients together using a fork.
  4. Let cake cool for 10 minutes then spread frosting.

Typical carrot-pineapple cakes have less carrots, drained crushed pineapple, and more oil. I figure the ingredient percentages should change slightly to improve the healthier components and still remain a sweet juicy cake. This is a large amount so you might want to cut the recipe in half and use an 8x8 cooking dish. Best if eaten within 2 days.
