  • add   4 large free-range eggs
  • add   2 tablespoons milk
  • add   40g cheddar cheese, grated
  • add   1/4 cup parsley, finely chopped
  • add   salt & pepper to taste
  • add   2 tablespoons butter
  • add   hot buttered toast, to serve

Use eggs at room temperature if possible and the mixture will remain soft. Cold eggs from the refrigerator can toughen the mixture.
