Ingredients [?] Add all ingredients to Shopping List

  •   1 large spaghetti squash (3 lb.)
  •   2 Tbsp. Parmesan Style Grated Topping
  •   1/2 cup Mozzarella Cheese
  •   1 cup finely chopped plum tomatoes (about 2 medium)
  •   1/4 cup chopped fresh parsley

Instructions

  1. PIERCE squash several times with a fork or sharp knife to allow steam to escape.
  2. Microwave on HIGH 10 min. or just until soft, turning over after 5 min. Let stand 5 min.
  3. CUT squash in half; remove and discard seeds.
  4. Using a fork, scrape insides of squash to form strands; place in bowl.
  5. Add remaining ingredients; toss lightly with fork.
  6. Spoon into one of the squash shells; discard remaining squash shell.
  7. MICROWAVE on HIGH 2 min. or until heated through.

I found a similar version of this recipe on my favorite food blog (thanks, Orangette). Serve this delicious soup with a big hunk of San Francisco's famous sourdough bread for an awesome fall meal. I realize how cheesy that sounds but seriously, you'll love it.

This came out of the Weight Watchers Cookbook but it is far from tasting like WW. It is 2 points for a one-cup serving and DELICIOUS. I LOVE this salad. It's the easiest recipe ever and it's SO delicious. I eat it as a snack, or as a meal either by itself or with a salad. So simple and AWESOME.
