  • add   1 bay leaf
  • add   2 white mushrooms
  • add   2 dried funghi porcini
  • add   2 tablespoons cognac
  • add   1 shallot
  • add   1 clove garlic
  • add   1/2 teaspoon allspice
  • add   1 tablespoon madeira wine
  • add   3 tablespoons butter
  • add   3 chicken livers
  • add   1/2 cup heavy cream
  • add   1/2 teaspoon peppercorns
  • add   1/2 onion

Instructions

  1. Marinate livers in the cognac overnight. Drain Soak dried mushroom in hot waterfor 1 hour.
  2. Drain it squeezing out all the liquid Melt 1 tbs butter in a pan Add the livers, onion, mushroom and garlic. Cook until almost all the red hasdisappeared.
  3. Add the cream, the funghi,and the spices and cook to reduce byhalf over high heat. Turn off heat, process everything and mix in the butterwhile still hot..
  4. Pour into a mold and refrigerate If you like you may top itwith gelatin
