  • add   1 cup green onion thinly sliced
  • add   3 bundles sai fun or bean threads-soak in water
  • add   1 large ripe tomato, diced in 1" cubes
  • add   4 cups water
  • add   1 Tablespoon soy sauce
  • add   dash of pepper to taste
  • add   4 chicken bouillon cubes
  • add   6 thin slices of fresh ginger- each about 2" long
  • add   1 teaspoon canola oil
  • add   6 boneless/skinless chicken thighs-cube bite size

Instructions

  1. Heat canola oil in a 4-1/2 quart dutch oven. On medium high heat, stir fry chicken until well done. Add ginger, bouillon cubes, pepper, water, soy sauce, and diced tomato to chicken. Bring to a boil and simmer for 30 minutes on low heat.Drain sai fun or bean threads and add to simmering chicken. Simmer over medium heat for 4 to 5 minutes or until sai fun appears clear/transparent. Add green onion and serve. Makes 6-8 servings.
