  1. Trim and rinse Chicken breast.pound chicken flat about 1/2 thickIn a bowl wisk eggs with milk, black pepper and a pinch of salt. In a seperate dish mix bread crumbsitalian seasoning and parmesan cheese.Dip chicken breast in egg mixture, then into the bread crumb mixtureheat vegetable oil in a skillet and fry breast until golden brown.set aside until ready to asseble dish for final cooking stage.In a food prossessor chop basil , sundried tomatoes until paste in texture, then drizzle in the olive oil until the basil and tomatoes become smooth, add pignoli nuts , parmesan and season with black pepper and a little sqeeze of lemon juice. Chop in prossesor until Pesto is smooth. set aside for final preperation.Saute fresh garlic in olive oil add baby spinach, white wine and lemon juice until leaves are wilted. Now take the chicken breast and place in a shallow baking . top with spinach mixture, then layer with roasted red pepper, and a slice of mozzarella cheese. bke in oven at 375 until chhese is melted and bubbly.While chicken is in oven, pour heavy cream in to a saute pan and bring to a boil, wisk in the pesto until it becomes a beautiful salmon color. reduce heat and simmer pesto and cream until it thickens to an alfredo sauce consitency.When chicken is done, the plating of the dish will be:Pour some pesto Cream sauce on the botton of your plate and swirl it around to cover the bottom of the plate. Place the layered chicken breast on top of the sauce and garnish with chiffinade of basil and sliced lemon wheel. I did not break down my recipe in amount of each ingrediant but i can provide it for you .
