  • add   2 tablespoons green peppercorns, optional
  • add   1/2 teaspoon oregano
  • add   1/2 teaspoon leaf thyme
  • add   1/2 cup cream
  • add   1/2 cup sherry
  • add   1/2 cup white wine
  • add   1 cup chicken broth
  • add   3 cloves chopped fresh garlic
  • add   1/4 cup chopped shallots
  • add   1/2 pound sliced mushrooms
  • add   1/3 cup olive oil
  • add   1/3 cup unsalted butter
  • add   6 slices provolone cheese
  • add   6 slices prosciutto
  • add   1/3 cup plus 1 tablespoon flour
  • add   6 boneless skinless chicken breasts

Instructions

  1. 1. Place the chicken breasts between two sheets of plastic wrap and bound until thin. Season with salt and pepper and dredge in the 1/3 cup of flour. Heat the butter and olive oil in a large skillet. cook chicken until golden then place in a buttered 13 X 9 inch baking dish. Top each breast with prosciutto , then the cheese. Set aside.2. Using the same skillet, cook the garlic and shallots until soft, do not brown. Add the mushrooms, wine, broth and herbs. Bring to a boil and cook for 10 minutes. Stir the 1 tablespoon of flour into a small amount of the sherry. Stir this into the skillet , then add the remaining sherry and cream. Season with salt and pepper if nedded. Pour the sauce over the prepared chicken.3. Bake at 350 degrees for 20 minutes.Serves 6
