  •   2-3 tbsp olive oil, for frying
  •   1 tbsp olive oil, for marinade
  •   2 tsp chilli powder, more or less to taste
  •   salt to taste
  •   4 tbsp soy sauce
  •   2 tbsp tandoori masala
  •   1 tbsp ginger paste
  •   1 tbsp garlic paste
  •   2 tsp paprika
  •   1 cup of yogurt
  •   1 whole chicken cut in several pieces (about 8-10)

Instructions

  1. Mix all of the ingredients with the chicken and let marinate for an hour or two, preferably overnight.

Put some olive oil (for frying) in a pan on medium heat. Add chicken pieces and cook for 8-10 minutes each side.

Do not discard remaining marinade after cooking the chicken.

Once chicken is done, in the same pan add the remaining oil and fry some birdseye Thai chillies until pale green. Add the remaining marinade and cook for 3-4 minutes.

Sauce is ready to be poured over the chicken and served. Best when served over fried rice.
