  • add   1 large onion
  • add   6-8 large eggs
  • add   hot sauce (optional)
  • add   1 lb fresh chorizo sausage
  • add   chopped avocados (optional)
  • add   sour cream
  • add   1/2 cup grated monterey jack cheese
  • add   6 large flour tortillas


  1. Fry a chopped onion and lb of chorizo (broken up), add 6 to 8 beaten eggs after everything is nice and brown.
  2. Keep'em moving until cooked Serve it on a sour cream coated, pan grilled tortilla, add a bit of grated monetery jack and, avacado (if desired) Serve with more sourcream and hot sauce.

Made this tonight. Really easy and REALLY good. My SO loved it - came back for more! We used picante sauce as well. Will definitely have again. Thanks!
