I made this as a side to the meaty melty potatoes - made the dish a bit less decadent.

  •   Enough Spinach for 4 servings
  •   1/2 cup walnuts
  •   1 cup sliced tomatoes
  •   1/4 cup shredded carrots
  •   1/4 cup artichoke hearts (diced)
  •   1/4 cup greek olives
  •   Mix with a balsamic vinaigrette dressing

This came out of the Weight Watchers Cookbook but it is far from tasting like WW. It is 2 points for a one-cup serving and DELICIOUS. These veggies are great reheated or cold in pita bread for lunch with some hummus. They make a wonderful accompaniment to any meat or fish dish.
