  •   6 cups hot milk
  •   1 cup short-grain rice
  •   3 Tbsp sugar
  •   2 Tbsp butter
  •   1 tsp vanilla extract
  •   1 tsp grated lemon peel
  •   1 tsp salt
  •   Ground Cinnamon

Instructions

  1. Comibne the first seven ingredients in a double boiler over boiling water and cook until the rice is tender, about 1 hour, stirring frequently. Serve warm or chilled. Sprinkle the ground cinnamon over the rice pudding upon to serve.
