my mother used to make this for my father and we always had it in the hot summer. The refreshing taste and coolness of the salad was great at dinner.

  •   3 T sugar
  •   1 1/2 to 2 quarts white vinegar
  •   6 large cucumbers (peeled and thinly sliced
  •   4 large onions (2 white, 2 vidalia, 2 purple) thinly sliced

Instructions

  1. use a large food container with a sealable cover. Mix the vinegar and the sugar together until sugar is dissolved. Place onions and cucumbers in the mixture. make sure it is just covering the vegetables. cover tighly and refrigerate for 2-4 hours until very chilled. serve in a large bowl with liquid and supply tongs for serving. this is very tasty! Enjoy!

you may use one kind of onion if you like but the different varieties add a colorful look to the salad. You are not limited to the type i mentioned. You can experiment with many varieties.
