This is a tasty crockpot dish that will remind you of Thanksgiving. Our version serves two, but it is easily doubled or tripled for larger families.

  •   2 skinless chicken breasts
  •   1/4 tsp. garlic powder
  •   salt & pepper to taste
  •   2 Tbs. canola oil
  •   1/3 cup shredded cheese (any kind you like)
  •   1 Cup crushed dry stuffing mix
  •   2 Tbs. melted butter
  •   1 can cream of chicken soup
  •   1/2 Cup milk

Instructions

  1. Season breasts with salt, pepper and garlic powder, then brown chicken in oil in a frying pan on high heat for about 2 minutes each side.
  2. Place chicken in crockpot, top with cheese and stuffing which you have mixed with the melted butter. Combine the soup and milk and pour over all.
  3. Cover and cook on low for 6 to 8 hours.

We served it with cranberry sauce and a little extra gravy made from mixing milk and cream of chicken soup together.

I got this from a crock pot cookbook several years ago and have made it many times. We all love it. Get a crusty sub roll, spread it with butter, garlic salt and pop in under the broiler for a few minutes and then make your sandwich. It is yummy and easy.
