  •   1/2 t white pepper
  •   1 t sea salt
  •   2 T milk or cream
  •   4 oz. frozen hashbrown potatoes
  •   diced bacon or ham
  •   finely chopped onions, peppers
  •   1/2 lb finely grated swiss or gouda cheese
  •   6 large eggs (beaten with a whisk)

Instructions

  1. Fry diced peppers, onions and bacon until lightly browned in 1 T butter. Set aside to cool . Whisk eggs until well beaten adding the milk or cream and salt and pepper. To the egg mixture add the frozen hashbrowns and the grated cheese. Stir gently to mix. Drain the bacon and vegetabes well and add to the mixture stirring to mix ingredients. Put in a well greased pie pan (large or another pan may be substituted). Place pan on a thick cookie sheet and put in the oven on the second rack setting from the bottom. Bake in a 350 degree oven for about 45 minutes. Check to see if eggs in the center have cooked. If not continue to bake keeping a close eye on the dish. When done let this sit for 10 minutes and then serve with dinner rolls and salad and fruit for a very nutritious and tasty meal. Enjoy!

After it is cooked you may add some grated cheese to the top and garnish as desired. Other meats may be substituted for the bacon and if cooked do not need to be fried. You may also omit the meat making this dish vegetarian.
