Dairy Free Alfredo Sauce

This is a pretty simple recipe. It's a pretty small batch, so you may want to double it. The recipe needs no dairy-free cheese, but feel free to add some or sprinkle on top.

Ingredients [?] Add all ingredients to Shopping List

  •   3-4 tablespoons nutritional yeast
  •   1-2 garlic clove
  •   black pepper
  •   salt
  •   3/4 cup plain soy milk
  •   1 1/2 tablespoons olive oil
  •   1 pinch nutmeg
  •   oregano
  •   2 teaspoons all-purpose flour

Instructions

    1. Heat oil over medium heat in a large skillet. Add minced garlic and lightly saute just until fragrant.
    2. Stir in the flour and stir for about one minute. This will be thick.
    3. Slowly pour in the milk.
    4. Add salt, pepper, oregano and nutmeg.Stir until creamy and thick.
    5. Turn off the heat and stir in nutritional yeast.
    6. Serve over your choice of pasta.

This is the "real thing" and not a 10 minute sauce. The recipe has been in the family for generations and never fails to please. The longer you cook it, the better it tastes, but don't forget to refrigerate overnight and reheat the next day. Recipe can be doubled by doubling all ingredients.
