  • add   1/4 cup marsala wine
  • add   3 tablespoons sugar
  • add   4 large egg yolks


  1. On top of a double boiler or bain-marie, whisk the egg yolks and sugaruntil dissolved.(I use an electric hand mixer)
  2. Add the marsalaslowly, while whisking constantly.
  3. Continue to whisk until themixture is thick and VERY fluffy.
  4. Serve warm in a pretty longstemmed glass.
  5. This can also be served as a sauce on top of fruit andor angel food cake.
