Wanted a veggie side, inspired by a caramelized brussel sprout recipe I had at a friend's house

4 Carrots - sliced

20 Fresh Green Beans - cut off ends

1/2 Purple Onion - diced

3 Garlic Cloves - diced

5 tbsp. Sun Dried Tomato pieces - diced

4 tbsp. brown sugar
-
4 tbsp. Olive oil
-
1 dash of salt
-
1 cup of water
Instructions
- 1. Pour 1/2 cup water onto a frying pan on high heat until boiling, turn down to medium and add carrots, cook evenly for 15 minutes.
- 2. Add remaining water, onions and green beans. Cook until water is almost completely evaporated. (adjust heat down if your veggies start to brown) (this should take about another 15 minutes)
- 3. Drain excess water from pan and add olive oil, garlic, sun dried tomato pieces, salt and mix together.
- 4. Add brown sugar and cook until all veggies are soft and slightly pan seared.
