Wanted a veggie side, inspired by a caramelized brussel sprout recipe I had at a friend's house

  •   4 Carrots - sliced
  •   20 Fresh Green Beans - cut off ends
  •   1/2 Purple Onion - diced
  •   3 Garlic Cloves - diced
  •   5 tbsp. Sun Dried Tomato pieces - diced
  •   4 tbsp. brown sugar
  •   4 tbsp. Olive oil
  •   1 dash of salt
  •   1 cup of water

Instructions

  1. 1. Pour 1/2 cup water onto a frying pan on high heat until boiling, turn down to medium and add carrots, cook evenly for 15 minutes.
  2. 2. Add remaining water, onions and green beans. Cook until water is almost completely evaporated. (adjust heat down if your veggies start to brown) (this should take about another 15 minutes)
  3. 3. Drain excess water from pan and add olive oil, garlic, sun dried tomato pieces, salt and mix together.
  4. 4. Add brown sugar and cook until all veggies are soft and slightly pan seared.
