easy chicken enchiladas

Ex boyfriend and I made them one night and they were yummy. I couldn't ever find the recipe when I needed it so I made my own.

  •   Tortillas (10 large or 15/20 small) flour or corn
  •   1 can of corn (drained) -you don't have to add this...I LOVE IT!
  •   2 or 3 boneless, skinless chicken breast
  •   1 can/jar of picante sauce/salsa
  •   1 med jar of sour cream (I use low fat!)
  •   1 16oz bag of mexican mix cheese (or your favorite cheese)
  •   1 pack of taco seasoning
  •   1/3 can of enchilada sauce (very liquidy be careful)

Instructions

  1. Season and cook chicken in skillet or george forman grill. Cut into small 1/2 inch pieces. Place on side.
  2. Mix sour cream (1/2 the jar) and 5/8 picante sauce/salsa and corn together in large mixing bowl. Add small bit of enchilada sauce and taco seasoning to mix. Add corn and then cooked chicken.
  3. Pour most of the remaining salsa on bottom of 9x 13 dish. Fill each tortilla with one large spoon full of mix, roll it up and fold ends. Add a little bit of salsa and cheese on top. Cover and bake at 350 or 400 degrees for 30 to 40 minutes or until ends are golden brown.
  4. Take out of oven and let sit for 10 minutes until cool.
