Easy Chicken Parmesan

When you are not up to spending a lot of time at the stove, this is the dinner dish for you. Just a quick prep and then pop it in the oven.

  •   6 boneless chicken breasts or thighs
  •   1 14 oz. jar of spaghetti sauce
  •   1-1/2 Cups Mozzarella Cheese
  •   6 Tbs. Parmesan Cheese
  •   Dash garlic powder
  •   Salt & Pepper to taste

Instructions

  1. Preheat oven to 350 degrees.
  2. Prepare a 9x13 baking dish with Pam.
  3. Pour in spaghetti sauce, stir in 3 Tbs. Parmesan cheese, add the salt, pepper and garlic powder.
  4. Add chicken and coat both sides with sauce.
  5. Cover with foil and bake 1 hour. Uncover and top with mozzarella and rest of Parmesan cheese; continue baking 5 minutes more until cheese has melted.
  6. Serve with hot buttered pasta.

This is adapted from "Food & Family" magazine. Says it serves 6, but in my household, it would serve more like 4 people!

I used to hate cooking a lot more than I do now, and this was one of the recipes that convinced me I could do it. It's about the easiest thing you can imagine and you don't even need to use the oven (you can, but it's not so slick).

My mom always used to make this when I was younger. When I went to college, I made her give me the recipe and it's been a big hit with my friends ever since.
