Easy Marinated Chicken

This chicken recipe uses things I always have on hand and it's easy to make the marinade before work and pop it in the oven after work for chicken everyone will eat. Prep time does not include marinating time (at least 4 hours) Recipe source: Bon Appetit (January 1981)

  • add   1 (8 ounce) bottle Russian salad dressing (or thousand island dressing)
  • add   3 lbs chickens
  • add   1 (1 ounce) envelope onion soup mix
  • add   1 cup orange marmalade


  1. Combine first three ingredients (salad dressing - soup mix) in a large bowl or marinating dish and mix well to combine. Add chicken, turning to coat all, cover with plastic wrap and refrigerate overnight or for at least 4 hours.
  2. Preheat oven to 350-degrees F.
  3. Arrange chicken in 9x13-inch baking pan.
  4. Bake 15 minutes, baste, turn chicken and baste again. Cook another 45 minutes, basting occassionally, or until chicken is done.
