  •   4 small any kind eggplant sliced
  •   4 med any kind firm tomato sliced
  •   1/2 lb sliced any kind Italian cheese
  •   2 table spoon fresh chopped basil
  •   fresh hand full whole leaf basil (for decoration)
  •   4 table spoon balsamic vinegar &
  •   extra virgin olive oil
  •   salt & lemon pepper to taste

Instructions

  1. in a large pan brown the eggplant slice on both sides using vegetable oil. for 2 min on each side.
  2. using a large platter , arrange the eggplant , tomato & cheese from center going out word in the platter.until the platter is full .
  3. sprinkle with the lemon pepper,salt, balsamic vinegar,& olive oil garnish with basil & is ready to serve with your favorite toasted sliced bread .
