4 small any kind eggplant sliced
-
4 med any kind firm tomato sliced
-
1/2 lb sliced any kind Italian cheese
-
2 table spoon fresh chopped basil
-
fresh hand full whole leaf basil (for decoration)

4 table spoon balsamic vinegar &
-
extra virgin olive oil
-
salt & lemon pepper to taste
Instructions
- in a large pan brown the eggplant slice on both sides using vegetable oil. for 2 min on each side.
- using a large platter , arrange the eggplant , tomato & cheese from center going out word in the platter.until the platter is full .
- sprinkle with the lemon pepper,salt, balsamic vinegar,& olive oil garnish with basil & is ready to serve with your favorite toasted sliced bread .
