  • add   Approx. 2 tbls. Olive oil and 2 tbls. butter
  • add   Salt & pepper to taste
  • add   Cilantro
  • add   1 ripe tomato, seeded and chopped
  • add   Juice from 1 lime
  • add   1 ripe avocado, sliced
  • add   1 cup grated con queso (or any white, mild cheese)
  • add   2 cups of Doritos salsa chips (ground)
  • add   2 chorizo sausage links
  • add   1 cup guacamole dip
  • add   6 skinless, boneless chicken breast


  1. Pre-heat oven to 350 degrees.Flatten chicken breast between two pieces of wax paper and pound to ¼ inch thickness.Season chicken breast with salt and pepper to taste.Heat olive oil and butter in medium size skillet, and sauté chicken breast approximately 2 minutes per side until juices run clear.Squeeze limejuice over chicken on both sides when turning. Remove from skillet and place in 9x12 baking dish.Remove chorizo from casing and sauté in skillet, until crumbled and cooked through. Set aside.Take salsa chips and crumble into small pieces, set aside.Coat top of chicken generously with guacamole dip.Divide sausage into 4 equal portions and spread sausage over the chicken.Sprinkle crumbled salsa chips evenly over the chicken.Top with grated cheese.Place baking dish into preheated oven for 5 minutes or until cheese melts.Remove from oven and garnish with sliced avocado, chopped tomato and cilantro before serving.
