  • add   1/2 cup chopped fresh coriander
  • add   1 tablespoon grated lime rind
  • add   1 tablespoon lime juice
  • add   1/2 cup chopped scallions
  • add   1/2 jalapeno pepper, seeded and finely minced (wear rubber gloves when handling)
  • add   1 teaspoon olive oil
  • add   1 cup chopped seeded plum tomatoes or roma tomatoes (about 4)

Instructions

  1. Mix all ingredients.
  2. Enjoy.
