this is a southern Persian dish.. it is healthy & delicious. it is slow cooking that makes it fantastic.. ofcourse this recipe is my version of Ghaleiyh Mahi..

2 lb of monk fish cut in 3 by 3 inch( no skin & no bone)
-
1 cup diced Cellery
-
1 cup chopped cilantro
-
1 cup chopped green onion
-
1 cup chopped leek
-
1 cup chopped Parsley
-
1 cup Sedaf dry sabzi Mahi( soak before)
-
Extra virgin oilve oil as much needed
-
1 cup Tamariand syrup
-
1can 16 oz diced tomato
-
16 clove diced garlic
-
lemon peper to taste
-
red crushed pepper to taste
-
1 tb spoon turmeric & paprika
-
1 cup orange juice
Instructions
- in a large pot salute & lightly brown Cellery, ,cilantro,parsley,leek,garlic, green onion.& soaked drained Sedaf sabzi Mhai..then add turmeric, paprika & lemon pepper & dry red pepper totaste..then add the diced tomato slow cook the ingredient for 30 min...add the orange juice.
- at all time ck for the mix to make sure it doesnot dry up. if needed add water.shoul have the concistency of stew.
- cook on low heat for another 30 min.. once you taste & smell the aroma,,then add the chunk of monk fish stewed ingredients & slow cook for 20 min .. let sit for 15 min .
- serve with Basmati rice,,
