This dish is one of Persian authentic stew. & alwayes is served with white Basmati rice(polo).This stew is my favorite stew. also you can make pizza with this stew. recently was created with a Persian chef in Italy pizza contest & he won the first place , so I created my own version of this with my own recipe..please ck it out in my recipe site in pizza section

1 1/2 lb beef chunks ( this dish could be made with any kind of meat mostly beef , lamb or chicken)
-
1 large onion chopped
-
8 oz can of red kidney beans
-
8 oz chopped spinach
-
8 oz chopped cilantro
-
1 cup chopped leek
-
1/4 cup Fenugreek dry or fresh chopped
-
1 large onion chopped
-
4 clove of garlic minced
-
extra virgin olive oil as needed
-
lemon pepper to taste
-
salt to taste
-
1teas turmeric
-
1 teas paprika
-
1 teas crushed saffron
-
1 tbs crushed dry lime ( limo Omani) you can fin in any Asian store or two whole fresh lime juice.

2 cups of boiled water & as needed.
Instructions
- In A med large pot brown the onion & garlic.
- add meat chunks, brown for 5 min. Add turmeric, paprika & saffron stir & add all the chopped greens to meat,
- brown for 5 min.
- Add water stir & cook for 20 min.add the dry lime (limo Omani.or lime juice.add more water if there is a need for the right amount of gravy in stew..cover the pot & cook for 15 min or more until meat tender. add the kidney beans stir & taste for salt & lemon pepper .cover the pot & cook for 20 more min.as soon as the meat is fully cooked & the stew is just right turn the stove off .let it sit for 15 min before serving..

I have seen and tasted this dish first hand. Great persian dish. Put it on my moms tahdeek (crispy rice) and it makes a great appetizer
