  • add   1/2 red pepper, roasted and cut into strips
  • add   ~1/2lb. feta cheese, crumbled
  • add   ~12 Kalamata olives,pitted and halved
  • add   1/4c. olive oil
  • add   2 cloves garlic
  • add   1/4c.liquid from artichokes
  • add   2 jars[6-7oz. each]marinated artichoke hearts,drained and quartered
  • add   4 boneless, skinless chicken breast halves


  1. Season chicken with~1/4t. salt. Toss with artichoke liquid,garlic and olive oil.Marinate ~20 minutes.Put into 9x13 baking dish.Add artichokes,olives,feta cheese and roasted red pepper.Bake, covered,~30 minutes til chicken is no longer pink.Serve hot or at room temperature.
