1 cup vegetable oil

3/4 cup panko

3 eggs, beaten

2 chicken breasts-boneless and skinless

chicken-crispy:

1 tablespoon vegetable oil

Chicken-"grilled"-(sauted):

20-30 fresh Basil leaves

2 roma tomatoes-sliced

1/2 cup olive oil

4 cloves of garlic

1 loaf of narrow French bread

Bruschetta:
Instructions
- Preheat broiler
Bruschetta:
Cut the loaf of bread on the biased into slices approximately 3/4 inch thick, about 16 slices. Place on a baking sheet and toast under the broiler until brown- 2 minutes on the first side and 1 - 1 1/2 minutes on the second side.
While still hot, rub one side of each slice with 1 clove of garlic, and brush each slice with oil.
"Grilled" chicken:
lightly pound each chicken breast and cut in half, making 4 total pieces.
Season with salt and pepper and saute over medium-high heat in the oil until golden brown.
Crispy chicken:
Lightly pound each chicken breast and cut in half, making 4 total pieces.
Season each piece with salt and pepper, then dip in the egg, then the flour, back to the egg, then to the panko.
Fry the chicken in the oil over medium-high heat until golden brown.
To prepare Sandwiches:
On one slice of bruschetta, lay down one piece of chicken (grilled or crispy), top with a tomato slice, 3-4 basil leaves, and another slice of bruschetta.
