grilled shrimp with mango lime vinaigrette

Found this in a cookbook. Really spicy and then the sweet vinaigrette balances it out. Haven't met a person who didn't love it!

  • add   Marinade:
  • add   1/4 cup canola oil
  • add   1 tsp kosher salt
  • add   1 tsp granulated garlic
  • add   1/2 tsp fresh ground pepper
  • add   1/2 tsp ground cayenne
  • add   32 large deveined and peeled shrimp (leave on tails)
  • add   Vinaigrette:
  • add   1/2 cup roughly chopped mango
  • add   1/4 cup canola oil
  • add   1/4 cup fresh cilantro
  • add   1 whole scallion trimmed
  • add   1 tbs fresh lime juice
  • add   1 tbs rice vinegar
  • add   1 half inch section fresh ginger, peeled and chopped
  • add   1/2 tsp kosher salt
  • add   1/4 tsp fresh ground pepper


  1. Marinade: Mix ingredients in bowl. Add shrimp and coat thoroughly. Marinate up to 1 hour.
  2. Vinaigrette: Combine vinaigrette ingredients in blender or food processor. Process about a minute until you get a smooth emulsified texture.
  3. Remove shrimp from marinade and discard marinade. Grill over direct heat 2 to 4 min. Until they are pink (careful not to overcook them).
  4. Serve shrimp with vinaigrette on side.

I place four or five shrimp in a skewer and grill them that way. Remember to soak the skewers for almost an hour before grilling.
