  • add   2 large flour tortillas
  • add   assortment of thinly sliced grilled vegetables (red bell peppers, zucchini,eggplant,& portabello mushrooms are all great, but don't limit yours)
  • add   1/4 cup packed basil leaves
  • add   1 garlic clove
  • add   salt & freshly ground black pepper
  • add   4-6 slices italian Fontina cheese
  • add   2 teaspoons white wine vinegar
  • add   1/2 cup mayonnaise

Instructions

  1. basil mayonnaise: In a food processor or blender, puree together the mayonnaise, vinegar, garlic, and basil leaves until smooth.
  2. Season to taste with salt and freshly ground pepper.
  3. sandwich: Place a tortilla on a flat surface and spread with the basil mayo mixture.
  4. Arrange 1 or 2 layers of the grilled veggie's over the tortilla.
  5. Lay cheese over top of vegetables.
  6. Tightly roll up the tortilla and secure with a toothpick.
  7. Cut into 4 pieces.
  8. Repeat process for remaining tortilla and vegetables.
