This is a quick meal for two. Can be doubled. I adapted it from Everyday Food.

Ingredients [?] Change Serving Size Add all ingredients to Shopping List

  •   1 Can "No Beans" Chili or 2 cups of your own chili
  •   1/2 Bag fresh or frozen hash browns (thawed)
  •   1 cup shredded cheese (your favorite)
  •   1/8 Teaspoon Garlic Powder
  •   Salt and Pepper to Taste

Instructions

  1. Preheat oven to 375 degrees. Spray a small baking dish with cooking spray.
  2. Place chili in baking dish. Mix hash browns with cheese and seasonings and place on top of the chili.
  3. Bake for 35 to 45 minutes until potatoes have browned.

I needed to make a last moment pot luck dish and had not planned anything. So i opened the pantry to see what was on hand, i had smoked salmon, 2 -3oz. packages, a 12 oz. jar of artichoke hearts in brine, a12 oz. box of tri-color Rotini pasta. I always have butter , flour and cheeses. So i Made a casserole from these ingredients.
