This is a little spicy but that depends on the sausage. My hubby really liked it.

I lb sweet turkey sausage
-
2 cans chicken broth (Low sodium)

1 can diced tomatoes undrained (low sodium)

1 cup diced frozen spinach
-
1 med. leek chopped or 1 med onion

3 cloves garlic chopped
-
1 cup water
-
1 cup chopped carrots
-
1 can white navy beans (optional)
-
1 1/2 cups spinach tortalinni noodles
Instructions
- Mix broth and water , bring to a boil add sausage cut into chunks, simmer 15 min till almost done. Add all but the tortilini noodles. Simmer another 15 min then add the noodles and simmer again till noodles are done.
- More water may be needed depending on what is absorbed by the noodles.

I have also put 3 boulion cubes in about 4 -5 cups of water instead of cans of broth.This is easy and healthy. I served this with garlic bread.
