  • add   1/4 cup cheese & garlic croutons
  • add   1/8 tsp. salt (optional), or to taste
  • add   1/4 tsp. dried dill, or 1/2 tsp. fresh dill, chopped
  • add   1/2 tsp. lemon juice
  • add   1 Tbsp. water
  • add   1/2 tsp. white wine vinegar
  • add   1 Tbsp. plus 1 tsp. capers, drained and rinsed
  • add   2 tsps. olive oil
  • add   1 oz. feta cheese, crumbled
  • add   1 oz. black olives, pitted and thinly sliced
  • add   2 Tbsps. red bell peppers, seeded and thinly sliced
  • add   2 Tbsps. cucumber, peeled and thinly sliced
  • add   1/2 tomatoes\raw, cut into wedges
  • add   2 oz. european salad (or other packaged salad mix)
  • add   3/4 cup spinach leaves\raw, rinsed, tough stems discarded and torn into pieces


  1. Combine first 7 ingredients in a salad bowl and toss. Combine remainingingredients, except croutons, in a jar with a tight-fitting lid. Add pepper to taste. Shake vigorously. Pour dressing over salad just before serving and toss.
