holiday yule log - fat free (low sugar) low calorie

After many years of not baking at holiday time due to being fearful of "falling off the wagon" with my weight loss, I created this yummy guilt free ( i LOVE anything that is Guilt Free) Yule Log :)

Ingredients [?] Change Serving Size Add all ingredients to Shopping List

  •   1 - Angel Food Cake Mix
  •   2 - Packets of Dream Whip
  •   1 - Small Box of Sugar Free Instant Chocolate Jello mix
  •   Fat Free Spray (like PAM)
  •   1 tsp - Vanilla Extract
  •   3 TB Cocoa Powder unsweetened
  •   1 Cup Skim Milk
  •   1 tsp Powdered Sugar

Instructions

  1. Prepare your angel food cake according to the directions on the box. Add the 1 small box of sugar free instant chocolate jello mix and mix all together well.
  2. Take a deep Cookie Sheet and spray the corners lightly with Fat Free Spray (like PAM) so help the waxed paper lay in the cookie sheet nicely.
  3. Spray the top of the waxed paper with Fat Free Spray (like PAM) then pour your angel food cake mix on top of the waxed paper. Bake in the oven on the middle rack at 375 degrees.
  4. (This will not take long to bake since it is baking thinly on a cookie sheet.) so watch it carefully so it doesn't burn.
  5. It usually bakes for about 10 - 15 minutes.
  6. After you think it is done baking, remove it from the oven and set it out to begin cooling.
  7. Once the cake is about 1/4 done cooling (You do NOT let this set for hours, it has to be "rolled" while the cake is still fairly warm) then start to prepare the white filling.
  8. Take 2 packets of the Dream Whip and add 1 cup of cold skim milk and 1 tsp of vanilla to it. Beat on HIGH speed for about 3 minutes until very thick and frothy.
  9. While the whip topping is beating, carefully remove the waxed paper from the bottom of the cake. I like to then use a pizza cutter to remove the dry rough edges of the rectangular cake.
  10. You will use about 1/3 of this white whip topping to spread on top of the cake.
  11. Once you have that done, carefully start at one end of the cake and start rolling it into the "log form".
  12. Once it is rolled, you can either let it remain that large, or if giving as a gift, use a serated knife to cut it carefully down the center to create 2 yule logs.
  13. Now take the remaining 2/3 of the white topping and add 3 TB of dry cocoa powder to it and beat for another minute.
  14. Take this and spread it on the top and sides of the yule log, make it rough, not smooth and pretty (remember, its a LOG )
  15. Then take a very very tiny amount of powdered sugar and sprinkle it on top of the Yule Log (that's the snow)
  16. Make sure to keep your logs in the fridge.
  17. These make very pretty gifts and it is also a GREAT fat free, low sugar, low calorie dessert at holiday time.
  18. Talk about GUILT FREE!
