  • add   1/2 cup onion,chopped finely
  • add   2 tablespoons vegetable oil
  • add   2 teaspoons dried sage
  • add   1 teaspoon ground black pepper
  • add   1 tablespoon sugar or brown sugar
  • add   1/8 teaspoon crushed red pepper flakes
  • add   1 pinch ground cloves
  • add   1/4 teaspoon cayenne
  • add   1 teaspoon fresh thyme chopped finely
  • add   1 large egg yolk
  • add   2 pounds lean ground pork

Instructions

  1. cook onion in 2 tablespoons of vegetable oil in a small,heavy skillet over moderately low heat. stir occasionally untill onions soften and begin to brown 8 to 10 minutes cool 10 minutes
  2. in a small bowl, combine the sage, ground black pepper,sugar,crushed red pepper,cloves,cayenne and thyme
  3. place the egg yolk,pork and reserved onion in a large bowl and add the mixed spices mix well form into 16 patties, 2 ounces each.
  4. pan fry the patties in a large skittet over medium high heat for 5 minutes on each side,or untill the internal temperature reaches 160 f
