  • add   lime (optional)
  • add   salsa (optional)
  • add   1/2 head iceburg lettuce (chopped)
  • add   cooking spray
  • add   2 cups bread crumbs
  • add   1/2 cup finely chopped cilantro
  • add   1 4 oz. can diced jalapenos
  • add   1/2 tsp. cumin
  • add   8 oz. cream cheese (softened)
  • add   pepper to taste
  • add   salt to taste
  • add   4 boneless skinless chicken breasts

Instructions

  1. Preheat oven to 375 degrees. Prepare filling: combine softened cream cheese, 1/2 tsp cumin, diced jalapenos and 3 tbsp. chopped cilantro. Mix well. Place chicken breasts between two pieces of plastic wrap. Pound breasts with mallet until approximately 1/4 inch thick. Salt and pepper chicken breasts to taste. Spread approximately 1/4 of filling to cover each chicken breast on one side. Beginning with smallest side of breast roll up and secure with toothpicks. Combine bread crumbs and 3 tbsp. chopped cilantro. Roll each chicken breast in bread crumb mixture. Place chicken breasts in baking pan. Spray top of chicken breasts with cooking spray. Bake in 375 degree oven for 20 minutes, turn and bake for 10 additional minutes or until meat thermometer shows breasts are cooked to 165 degrees. Remove breasts from oven and let rest for 10 minutes. To serve: Remove toothpicks. Slice chicken breasts in half diagonally. Serve on top of chopped lettuce with salsa and squeeze lime juice on top. Garnish with remaining cilantro.
