Lentil Barley Soup.

in a normal fall , winterly day this wonderful soup is a fantastic dish to gather around the table with family & friends. it is delicious, healthy & easy!

  • add   1/2 cup dry lentil ( boil in water 1/2 cooked ,drain & put aside)
  • add   1/2 cup barley
  • add   1 large onion diced
  • add   2 tbsp diced garlic
  • add   1 16 oz chicken broth( veg 0r beef)
  • add   1 cup dice carrot 1 cup dice celery
  • add   2 pinch of dry thyme(if fresh use 1 tabs chopped)
  • add   2 pinch dry sage( if fresh use 1 tbsp chopped)
  • add   2 tbsp dry dill ( or if fresh use 2 tbsp chopped)
  • add   2 tbsp lemon juice
  • add   paprika to taste
  • add   turmeric to taste
  • add   2 tabs balsamic vinegar
  • add   4 dry apricot diced
  • add   4 dry prune diced
  • add   1 cup diced red bell pepper
  • add   1 cup diced tomato
  • add   Extra virgin olive oil
  • add   Kosher salt to taste

Instructions

  1. In a large pot, saut'e garlic & onion in extra virgin olive oil.
  2. add celery, carrot , barley and lentil .
  3. add all the seasoning, toss .
  4. Add the broth. cover with lid. cook over med heat for 15 min.
  5. add the red bell pepper,tomato, apricot & prune.
  6. cook for 20 more min. if it need more liquid either add water or more broth.taste the soup for salt ,if it need salt add to your taste .add the vinegar & lemon juice to your taste.
  7. cook for another 25 min. over low heat let it simmer.
  8. give it a final taste. & then serve.
