Low Carb Deviled Chicken Salad

Guiltless and satisfying for low carbers, a new twist on chicken salad. Makes a very hearty lunch. Prep time does not include time to cook chicken and boil the egg.

  • add   1 teaspoon Dijon mustard
  • add   1 hardboiled egg
  • add   1 whole chicken breast
  • add   fresh chives or 1 green onion
  • add   salt & fresh ground pepper
  • add   1/2 cup celery
  • add   2 tablespoons mayonnaise

Instructions

  1. Prepare whole chicken breast;grilled is tastier.
  2. Cube and put in mixing bowl.
  3. Mix in chopped hardboiled egg,celery, and green onions or chives.
  4. Mix in mayonnaise and mustard.
  5. Add salt and fresh ground pepper to taste.
  6. Chill and enjoy.
