Low-Carb Stuffed Zucchini

  • add   1 lb cooked lean ground beef
  • add   1/2 cup onions
  • add   1 ounce kraft pizza shredded low-moisture mozzarella-cheddar blend cheese
  • add   1 teaspoon garlic salt
  • add   1/2 cup canned tomato sauce
  • add   1 medium tomato
  • add   2 large zucchini


  1. Cut zukes in half lengthwise and bake at 400 for 20 minutes.
  2. Scoop out center of baked zucchini chop and reserve.
  3. Saute onion, beef, garlic, tomato, tomato sauce.
  4. Add the scooped-out zucchini to beef mixture and saute until all ingredients are tender.
  5. Spoon beef mixture into hollowed out zucchini boats.
  6. Top with cheese.
  7. Bake at 400 for 30 minutes.

I have seen and tasted this dish first hand. It was delicious! The combination of flavors and texture were amazing. Although the recipe is written well I doubt anyone could recreate such an amazing dish. Do you know how many carbs are in this?
